素油渣叁峇臭豆 Braised Petai with Mock Lard

材料A :
素油渣100克、素马来栈10克、素叁峇200克
材料B :
臭豆1包、疯柑叶3片(切丝)
调味料 :(搅匀)
阿三膏100克(加入300毫升水挤出汁)、糖4汤匙、盐1茶匙
做法 :
1 素油渣以慢火炸至脆。(图1)
2 把A材料放入锅内(素油渣除外),用中火炒至出油和香。(图2)
3 加入调味料煮滚后加入材料B,煮多3分钟,盛起即可。(图3-5)

INGREDIENTS A :
100g mock lard, 10g vegetarian Belacan, 200g vegetarian sambal
INGREDIENTS B :
1 pkt petai, 3 kaffir lime leaves (juliennes)
SEASONING :
100g asam Jawa paste (wash with 300ml water and filtered), 4 tbsp sugar, 1 tsp salt

METHOD
1 Deep fry mock lard until crispy, set aside. (pic 1)
2 Saute ingredients A (except for mock lard) with medium heat until fragrant. (pic 2)
3 Add in seasoning and bring to boil, toss in ingredients B, cook for another 3 minutes, done. (pic 3-5)
